Porcupine Meatballs
ingredients
- 1 can Condensed tomato soup
- 1 lb Ground Beef
- 1 cup Minute rice
- 1 egg slightly beaten
- 1/4 cup finely chopped onion
- 1 tsp Salt
- 1 tsp pepper
- 3/4 cup Water
- 1 tsp Mustard
- 1 Small clove of garlic minced
- 1 tbs Olive oil

Combine 1/4 can of the tomato soup, ground beef, rice, egg, onion, salt, and pepper. Mix thoroughly and shape into 16 meatballs.

Brown meatballs in skillet with olive oil. Drain when done.

Add the water, mustard, garlic and remaining soup.

Cook covered on low heat for 20 minutes or until done.
