Curried Beef and Vegetable Soup
Hearty beef and vegetable soup seasoned with curry spices
ingredients
- 1 1/2 lb beef
- 4 oz beef stock
- 1 cup flour
- 4 tbsp butter
- 4 garlic cloves, sliced
- 1 large leek, sliced
- 1 medium red onion, diced
- 6 medium red skinned potatoes, washed
- 1 medium celery stalk, diced
- Meat seasoning
- Pepper
- Garlic powder
- Curry powder
- Salt

Cut beef into 1-2 inch cubes. Dust with meat seasoning, pepper, and garlic powder and roll lightly in flour.

Melt 2 tbsp of butter in large stock pot and brown beef. Slowly pour in beef stock and add 2 Tbsp curry powder.

In a separate skillet, melt 2 Tbsp of butter and saute garlic cloves, leek, and red onion. Gently add the sauteed vegetables to the beef and curried stock.

Cook on low-medium heat for 30 minutes.

Add potatoes, celery, and several pinches of salt.

Simmer on low-medium heat for 20 minutes until potatoes are soft enough to pierce with a fork.
