Grandpa Sals' Chicken Piccata
Chicken Piccata created by pounding chicken breasts and simmering them with mushrooms and garlic in a lemon-wine mixture. Chicken piccata is a quick and easy main dish recipe that my dad would make for Dom & I whenever he would visit.
ingredients
- 2 whole skinless, boneless chicken breasts, halved lengthwise
- Salt and pepper
- 1/4 C flour
- 4 tbsp. butter
- 1 C sliced fresh mushrooms
- 1 garlic clove, minced
- 1/4 C dry white wine or chicken broth
- 2 tbsp lemon juice
- 2 tbsp chopped parsley
directions

Dredge Chicken in flour seasoned with salt and pepper.

Saute in Olive Oil and butter, remove when golden.

Don’t rinse pan, in the same pan with the drippings saute the remaining ingredients,and then pour over chicken.
