Delicious with cream cheese!

ingredients

  • 1/2 c butter
  • 1 c sugar
  • 2 eggs
  • 1 c mashed bananas
  • 1 tsp lemon juice
  • 2 c flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 c nuts

directions

    Preheat oven to 350 degrees. Grease loaf pan. Cream butter and sugar in large bowl.

    In small bowl, beat eggs til light, then add bananas and lemon juice. Blend banana mixture into butter/sugar mixture.

    Sift flour, baking powder, and salt, and mix quickly with banana mixture. Add nuts and then pour into loaf pan.

    Bake for 25 minutes, add foil loosely over top, then bake for another 35 minutes or until knife comes out clean.

    Cool in pan on rack for 10 minutes, then remove loaf from pan and cool on rack. Wrap and store overnight before slicing.

Brenda gave me this recipe many years ago. Although it never seems to come out perfectly, it still always tastes great. Just watch to be sure the edges or bottom don't burn!
