Wildly Delicious Turkey Salad
Another great way to use leftover turkey
ingredients
- 6 oz wild rice
- 2 1/3 C water
- 2 C cubed turkey (white and dark meat)
- 1/4 lb fresh mushrooms sliced
- 1 C firmly packed spinach, leaves cut into thin strips
- 2 green onions sliced including tops
- 1/3 C dry white wine
- 1/4 C vegetable oil
- 2 Tea sugar
- 3/4 Tea salt
- 1/4 Tea pepper
- 10 cherry tomatoes

Cook rice and transfer to large bowl. Cool.

Add turkey, mushrooms, spinach and onions.

Mix wine, oil, sugar, salt and pepper and add to rice mixture.

Chill until ready to serve.

Add tomatoes once ready to serve.
