Pineapple Doodle Cake

This is different take on Pineapple Upside Down Cake. Much better and the frosting is a delight.

ingredients

Cake
  • 2 cups flour
  • 2 cups sugar
  • 2 tsp baking powder
  • 2 eggs
  • 1 large (20 oz) can sweetened crushed pineapple, drained reserving juice
  • 1/2 tsp salt
Frosting
  • 1 1/2 cups sugar
  • 1 stick butter melted
  • 1 small (8 oz) can sweetened pineapple, drained (reserve juice)
  • 1 can (5-7 oz) angel coconut
