Mango & Black Bean Salad
ingredients
- 2 cans black beans, rinsed and drained
- 4 mangoes, peeled & sliced
- 2 cups cooked white corn (can use canned)
- 1 cup fresh cilantro
- 1 cup scallions, chopped
- 2 red bell peppers, diced
- 1 cup olive oil
- 1/2 cup balsamic vinegar
directions
Mix olive oil and vinegar. Set aside. Combine all other ingredients, then add the oil and vinegar mixture. Stir and chill before serving.
