Eggplant Casserole
Don’t add salt
ingredients
- 4 thin eggplants
- 1 onion, chopped
- 2 green peppers, chopped
- Some cubed mushrooms
- Large bottle of Ragu spaghetti sauce
- Basil and oregano
- 1 1/2 lb Italian sausage
- Italian bread crumbs
- Mozzarella cheese
- Parmesan cheese
- Sliced tomatoes

Saute onions, peppers and mushrooms. Separately saute sausage. Add onion mixture, sausage, oregano, basil and Ragu, simmer.

Slice eggplants, bread with crumbs and fry in a little oil.

In a 13 x 9 glass baking dish, layer sauce, eggplants, cheese. Finish with cheese and slice tomatoes.

Bake 375, covered, for about 20 minutes. Uncover and cook until hot and bubbly, about another 10 minutes.
