Salmon Fillets over Couscous
Very elegant, easy and tasty way to serve salmon
ingredients
Salmon- Olive Oil
- 4 4oz pieces salmon
- 1 fresh Lime or lime juice
- House Seasoning (recipe follows)
- Butter
- Couscous (recipe follows)
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- 2 1/4 cups water or chicken stock
- 1/2 t. salt
- 2 t. butter
- 10 oz couscous
- 1 cup diced tomatoes
- 1 cup crumbled feta cheese
- 1/2 cup green onions
- Combine water or stock, salt and butter in a saucepan, over medium heat and bring to a boil. Stir in couscous. Add diced tomatoes, feta and green onions.. Remove from heat, let stand 5 minutes. Uncover, fluff with fork and serve hot or cold.

Add a drizzle of olive oil to glass pan and place salmon in it. Squeeze juice of one lime over salmon and sprinkle with house seasoning. Top with pads of butter. Wrap in foil and bake for 20 - 25 min at 350°. Serve on bed of couscous. (Or grill salmon)
