Baba Sadie's Potato Latkes
Perfect for Passover
ingredients
- 6 large potatoes
- 2 large eggs
- Matzoh meal--amount determined by how watery the grated potato mixture is.
- Medium yellow onion
- Salt (at least a teaspoon...)
- Pepper (to taste)
- Vegetable or olive oil

Peel potatoes and place in a bowl of cold water to keep them from turning black.

Grate the potato and onion together (you can use a food processor but she couldn’t!--do not over-process or mixture will be gummy; don’t overload processor or lumps of potato will be left)

Separate yolks from whites of the egg.

Whip the whites until they form soft peaks.

Beat the yolk gently.

Add yolk to potato and onion mixture. Fold in egg white.

Add matzoh meal so mixture will hold together

Add salt and pepper.

Heat oil in heavy skillet---about 1/4 inch.

Add one large tablespoon of potato mixture and flatten pancake with back of spoon---repeat.

Turn with spatula when edges are golden.

When both sides are golden remove from pan.

Drain on paper towel.

As you are frying several batches liquid may gather in edges of bowl---pour off carefully and/or add matzoh meal so mixture won’t be too watery.

Best served when just made or frozen so they don’t turn dark
