Chicken Milano

Make sure you have plenty of warm Italian bread to go with this dish!

ingredients

  • 3 pound frying chicken, cut into serving pieces
  • 1/4 cup oil and 1/4 cup butter, heated
  • 1 large clove garlic, minced
  • 1 onion, chopped fine
  • 1/2 cup celery chopped fine
  • 1-2 green peppers, cut in strips
  • 1/2 cup wine
  • 6 oz can tomato paste
  • 1/2 cup water
  • 1 tsp oregano
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup grated Italian cheese

    Brown chicken pieces in oil and butter then add garlic, onion, celery and continue to cook for about 5 minutes. Do not scorch.

    Remove from pan and put it in a roasting pan. Combine wine, paste, water and all seasonings. Blend well and pour over chicken. Cover pan and bake in a 350° oven for about an hour.

You can double the sauce ingredients so you have some dipping gravy or just use your own Italian sauce and put in as much as you want.
