Orange Beef with Cashews

ingredients

  • 1 lb steak, sliced for stir-fry
  • 2 Tbsp brown sugar
  • 2 Tbsp + 1/4 cup soy sauce
  • 2 Tbsp chopped garlic
  • 4 cups broccoli florets
  • 2 tsp water
  • 4 scallions, cut into 1 inch pieces
  • 2/3 cup orange juice
  • 2 Tbsp cornstarch
  • 2 tsp rice vinegar
  • 2 tsp ground ginger
  • 1/2 tsp red pepper flakes
  • 2 Tbsp peanut oil
  • 1/2 cup salted cashews

    Combine beef, brown sugar, 2 Tbsp soy sauce, and garlic in plastic baggie, seal, turn to coat meat. Let stand for few minutes. Meanwhile, place broccoli and water in microwave safe dish. Cover tightly with plastic wrap. Microwave for 2 minutes.

    Stir together scallions, oj, cornstarch, vinegar, ginger, and pepper.

    Heat peanut oil in large skillet over med-high heat. Add the beef and marinade, stir-fry 1-3 minutes, add broccoli, stir-fry 1-2 minutes or until heated through. Add cashews, cook 1 minute. Stir in sauce and cook 2-3 minutes or until thickened.
