Little Sesame Cookies
These are the little ones wiyh sesame seeds all through them. Great for when you have leftover yolks from another recipe.
ingredients
- 1 c. toasted sesame seeds
- 1/2 c. flour (I used KA whole wheat)
- 1/2 t. baking powder
- 1 t. cinnamon
- 1/4 t. salt
- 1/3 c. sugar (I used unrefined)
- 2 T. butter, softened
- 2 egg yolks
- 1 t. cider vinegar
- 1 t. vanilla

Preheat oven to 375. Put some parchment paper on the cookie sheet (or grease it like a greedy palm).

Blend sesame seeds, flour, baking powder, cinnamon and salt in a small bowl. Cream butter and sugar in a bowl until light and fluffy (or as light and fluffy as 2T. of butter can get). Add egg yolks, vinegar and vanilla; beat well. Add flour mixture; beat well.

Pick up bits of dough with a heaping 1/2 t. measuring spoon and roll into little balls. Put them on the cookie sheet and flatten them a bit, so they are little disks.

Bake 5 to 6 minutes (mine took 14 minutes, so go figure) or until the edges are just golden. Remove from heat and cool on cookie sheets for a minute, then cool on wire racks.
notes
To toast sesame seeds, put them in a pan on medium and stir them around now and again until they smell like they're toasting.
