Mini Mexi Meatloaf
A time-honored classic made with a zing, quickly and easily.
ingredients
- 1 lb. Lean Ground Sirloin
- 1 Egg
- 1/4 c. Wheat Crackers, crushed finely
- 1/2 c. Salsa, you choose the heat
- 3/4 tsp. Chili Powder
- 1/4 tsp. Cumin, ground (optional)
- 1 c. Shredded Mexican/Taco Cheese

Preheat oven to 400.

Mix all ingredients, except cheese, well in a bowl.

Using an old ice cream scoop, place a scoop of mixture in each cup of a muffin pan.

Bake for 15-18 minutes.

Top with cheese and bake an additional 5 minutes.
