Crust
  • 1/2 cup hazel or Brazil nuts ground
  • 3 Tbsp brown sugar
  • 3 Tbsp flour
  • 3 Tbsp softened butter
  • Mix all ingredients together. Place in a pie pan and bake in 400 oven for 7-10 minutes.
Filling
  • 1 16oz. can pumpkin
  • 2 Tbsp water
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup milk
  • 1/2 tsp ground ginger
  • 2 egg yolks
  • 1/4 tsp ground cloves
  • 1 Tbsp unflavored gelatin
  • 2 egg whites (Rt)
  • 1/3 cup sugar
  • 1/2 cup sour cream
  • 1 tsp grated orange rind

    Dissolve gelatin in water. Combine: pumpkin, brown sugar, milk, egg yolks, dissolved gelatin-water mixture, cinnamon, ginger and cloves in a saucepan. Mix over medium heat till almost boiling. Chill for 2 hours.

    Beat egg whites and sugar till stiff (soft peaks). Fold together chilled pumpkin mixture with sour cream and orange. Fold in egg white mixture and add to crust. Chill.
