Moroccan-spiced pork loin with apricot couscous
ingredients
- 1/2 tsp ground cinnamon
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp olive oil
- 1 lb lean boneless pork tenderloin or pork loin OR four 4 oz boneless chops
- 10 oz uncooked plain whole-wheat couscous
- 2 c fat-free chicken broth
- 8.5 oz canned water-packed apricot halves, unpeeled and drained, chopped or 8 fresh apricot halves
- 1 TBS cilantro, fresh, chopped
