Roasted Beef Tenderloin

- 4-5 lb. Beef Tenderloin “butt”
- Seasoned Salt
- Lemon Pepper
- Tri-colored Peppercorns
- Olive Oil
- Butter

Preheat oven to 475 degrees.

Trim away most of the fat on the tenderloin, removing all of the silver cartilage.

Generously season the tenderloin with seasoned salt and rub it in with your fingers.

Generously season the tenderloin with lemon pepper.

Put peppercorns in ziploc bag and smash with mallet or can to break them up.

Heat olive oil in an iron skillet and sear one side of the tenderloin. Add 2 tbsp. butter to the pan. Two minutes later, flip the tenderloin and sear the other side.

Remove from skillet and place tenderloin on an oven pan with a rack. Sprinkle and press the peppercorns into every nook and cranny of the meat.

Slice several tablespoons of butter and place on top of the tenderloin.

Stick a meat thermometer lengthwise into the tenderloin. Place meat in a 475 degree oven until the temperature reaches just under 140 degrees, about 15 - 20 minutes.

Slice and serve.
