Napa and Cilantro Salad with Spicy Peanuts
This dish has a Vietnamese feel to it.
ingredients
- THE DRESSING:
- 1/3 cup toasted sesame oil
- 1/2 cup rice vinegar
- 1/4 cup soy sauce
- 1/3 cup apple cider
- Juice of 3 small limes
- 1/4 cup sugar
- 2 tbsp. minced fresh ginger
- 1 tsp. minced jalepeno pepper
- THE PEANUTS:
- 3/4 cup unsalted peanuts
- 2 tbsp. Tabasco sauce
- 1 tbsp. vegetable oil
- THE SALAD:
- 1/2 head Napa cabbage, outer leaves removed, inner leaves washed, dried and thinly sliced
- 1 cup loosely packed cilantro leaves
- 2 scallions, thinly sliced, including some green part
- 3 large carrots, peeled and cut into thin strips
- 4 red bell peppers, seeded, halved and cut into thin strips
- Roasted dried shallots (found in an Asian market)

A variation is to add sliced, smoked turkey or roasted chicken to the salad. Delish!
