Napa and Cilantro Salad with Spicy Peanuts

This dish has a Vietnamese feel to it.

ingredients

  • THE DRESSING:
  • 1/3 cup toasted sesame oil
  • 1/2 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/3 cup apple cider
  • Juice of 3 small limes
  • 1/4 cup sugar
  • 2 tbsp. minced fresh ginger
  • 1 tsp. minced jalepeno pepper
  • THE PEANUTS:
  • 3/4 cup unsalted peanuts
  • 2 tbsp. Tabasco sauce
  • 1 tbsp. vegetable oil
  • THE SALAD:
  • 1/2 head Napa cabbage, outer leaves removed, inner leaves washed, dried and thinly sliced
  • 1 cup loosely packed cilantro leaves
  • 2 scallions, thinly sliced, including some green part
  • 3 large carrots, peeled and cut into thin strips
  • 4 red bell peppers, seeded, halved and cut into thin strips
  • Roasted dried shallots (found in an Asian market)

A variation is to add sliced, smoked turkey or roasted chicken to the salad. Delish!
