Versatile Salad in a Pinch, Packed with a Punch
This salad is easy, tasty, and packed with a punch!
ingredients
- Generous amount of organic, fresh greens (for especially nutrient dense greens, add beet greens or arugula),
- Any vegetables you have on hand,(carrots, cucumber, tomatoes, etc.)
- Canned beans (Navy, Kidney, Black, Garbanzo, or Cannelloni),
- Cheese (crumbled goat or cubed hard cheeses),
- 1/2 can tuna (or cooked meat such as chicken or fish),
- Optional: olives or 1/2 c sauerkraut.
- Dressing:
- Flax oil,
- 1 tbs dijon,
- splash of balsamic vinegar or lemon juice,
- salt and pepper.
- For extra liver cleansing, I add ground milk thistle.

Add each ingredient in layers as you wish on top of a bed of greens.

For dressing, place dijon in small cup and wisk in oil. Add acidity of vinegar or lemon, and blend in salt, pepper, and milk thistle if using.
