Szechuan Shrimp Salad

ingredients

  • 1 pkg 8 oz fine egg noodles
  • 1/4 cu cooking oil
  • 2 TLBS rice vinegar
  • 2 TLBS soy or tamari sauce
  • 1 TLB toasted sesame seeds
  • 1 tsp ground ginger
  • 1 tsp sugar
  • 1/4 - 1/2 tsp dried red pepper or hot sauce
  • 1 # shrimp shelled cleaned cooked and chilled
  • 1/3 # fresh raw snow peas
  • 1 red pepper seeded and cut in julian strips
  • 1/2 cu diagonally sliced scallions
  • 3 bananas cut in 1/2 inch chunks

    Cook noodles - drain and chill. combine oil, vinegar, sauce, seeds, ginger, sugar and chili pepper. Add shrimp, snow peas, red pepper and scallions. toss well and chill. Just before serving stir in bananas. Serve over noodles
