Everyone who has tried this loved it and eats it regularly. I now make it with medium curry paste and enjoy it that much more

- 1/4 cup canola oil
- 1 tbsp mild curry paste
- 3/4 tsp salt
- 1 head cauliflower
- 1/4 cup fresh parsley or coriander
- 1 tbsp chopped fresh chives
Mix oil, curry paste and salt in a small bowl.
Cut cauliflower into florets and place in a large bowl.
Pour the oil-paste mix on the cauliflower and toss till coated.
Spread out the cauliflower florets on a baking sheet.
Cook at 400°F till tender and brown.
Sprinkle with coriander and chives
