Fuji Apple, Walnut and Herb Sald with Chicken

ingredients

  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. olive oil
  • 2 Tbsp. plain yogurt
  • 1 tsp. Dijon or spicy brown mustard
  • 1 Tbsp. finely grated lemon zest
  • 2 tsp. lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup walnut pieces
  • 1 cup cored and chopped apple
  • 2 Tbsp. Italian seasoning blend or dill
  • 1 cup shredded cooked chicken

    To make dressing:

    combine the lemon zest, yogurt, oil, mustard, vinigar, lemon, salt, and pepper. Mix well.

    To make salad:

    Combine walnuts, apples, dill/Italien seasoning, and chicken.

    Pour dressing over and serve.

notes

Also serve tossed with fresh lettuce and omit the seasoning if chicken already is. Make a bit more dressing if doing this to cover lettuce.
