Portuguese Frittata
The Portuguese Sausage gives this Frittata a wonderful flavor along with country fresh vegetables and farm fresh eggs. You will need to go to a Specialty Market to get the Portuguese Sausage. You will need a Cast Iron Skillet to bake the frittata. It is great for breakfast or for a brunch.
ingredients
- 2 tablespoons unsalted butter
- 1/4 lb Chourico or Linguica Portuguese sausage
- 1 1/2 cups yukon gold potatoes
- 3/4 cup red bell pepper
- 1 tablespoon serrano pepper
- 1/2 cup maui onion
- 1 tablespoon paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon cream
- 8 brown eggs

Pre-Heat the oven to 350°F.

Slice the sausage on the bias. Add butter and sausage to a 8 inch cast iron skillet. Saute 3-5 minutes or until the sausage is brown.

Cut potatoes, peppers and onion into a medium dice.

Add the potatoes, peppers and onion to the skillet. Season with salt, pepper and paprika. Saute until vegetables are soft about 3 minutes.

In a bowl place eggs and cream. Whip until eggs and cream are combined.

Place sausage in the skillet with the vegetables.

Pour the eggs into the skillet.

Bake for 30-35 minutes.
