BANANA BLONDIES

ingredients

  • 2 sticks butter or margarine
  • 1 lb. light brown sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • 2 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup butterscotch chips
  • 1/2 cup chopped walnuts (optional)
  • BANANA TOPPING:
  • 1/3 cup sugar
  • 4 tablespoons butter
  • 4 to 5 bananas chopped
  • 1 teaspoon vanilla extract

    Preheat oven to 350° F.

    Using an electric mixer with a large bowl, beat butter with brown sugar. Stir in beaten eggs and vanilla. Mix thoroughly.

    Sift together flour, baking powder and salt. Add flour mixture to butter mixture and beat until just combined. Stir in chips and nuts. .

    Spread dough into a lightly greased 9“ x 13” baking pan. Bake in the middle of oven for about 25 minutes or until a tester comes out clean and top is

    golden. Cool on a rack completely before cutting into squares.

    Topping: In a small saucepan combine all ingredients. Bring to a boil, then simmer for 5 minutes. Serve over cooled blondies.
