Mud Pie
ingredients
- Crust:
- 1 1/2 cups crushed vanilla wafers
- 3 Tbsp butter, melted
- Filling:
- 1 pint low-fat chocolate ice cream
- 1 quart low-fat coffee ice cream
- Caramel Sauce:
- 1/4 cup butterscotch chips
- 1 Tbsp low fat milk
directions
Mix vanilla wafers with margarine or butter. Press into the bottom of a 9-inch pie plate. Spread chocolate ice cream on crust. Scoop coffee ice cream over chocolate layer. Place in freezer. Make caramel sauce by melting butterscoth chips and milk. Stir to mix. Cool to refrigerator temperature. Spoon over coffee ice cream mounds. Return to freezer and freeze, at least 3 hours before serving. Cut into 10 slices.
