BRANDON'S MEAT LOAF

ingredients

  • 2 Tbsp. oil
  • 1/2 cup chopped onion
  • 1/4 cup chopped green or red pepper
  • 8 oz. can tomato sauce
  • 2 beaten eggs
  • 1 cup shredded cheese
  • 1 cup bread crumbs (if dry are used, soak in tomato sauce while getting the other ingredients ready)
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. dried thyme, crushed (or poultry seasoning)
  • 1 tsp. basil or oregano
  • 1 1/2 lb. ground beef
  • 1/2 lb. ground pork OR use 2 lb. meat loaf mixture containing veal

directions

    Brown onion and pepper in oil until tender. Add other ingredients, stirring to mix well.

    Form into a loaf-shape, don’t pack it tightly.

  • 3

    Place in an oven-proof baking dish on top of dry or stale bread to help absorb the grease.

    Bake at 350° for 1 1/2 hours.

  • 5

    Discard bread.
