BRANDON'S MEAT LOAF
ingredients
- 2 Tbsp. oil
- 1/2 cup chopped onion
- 1/4 cup chopped green or red pepper
- 8 oz. can tomato sauce
- 2 beaten eggs
- 1 cup shredded cheese
- 1 cup bread crumbs (if dry are used, soak in tomato sauce while getting the other ingredients ready)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. dried thyme, crushed (or poultry seasoning)
- 1 tsp. basil or oregano
- 1 1/2 lb. ground beef
- 1/2 lb. ground pork OR use 2 lb. meat loaf mixture containing veal

Brown onion and pepper in oil until tender. Add other ingredients, stirring to mix well.

Form into a loaf-shape, don’t pack it tightly.

Place in an oven-proof baking dish on top of dry or stale bread to help absorb the grease.

Bake at 350° for 1 1/2 hours.

Discard bread.
