Zucchini Bread

Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 1 tsp vanilla
  • 2 cups grated zucchini
  • 2 cups flour
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 3/4 cup chopped walnuts

    Preheat over to 350 degrees. Grease two loaf pans.

    Combine eggs and sugar and beat until fluffy. Add oil and vanilla to mixture. Separately mix flour, spices, baking powder and baking soda and salt. (Remove 3 tbsp of flour from mixture and stir into nuts to coat) Mix flour mixture and grated zucchini alternately into the egg mixture. Add nuts and stir to mix.

    Pour into two prepared loaf pans and bake for 1 hour.

    Cool and turn out onto wire racks.
