Mom's Pickled Fish
A childhood favorite growing up in Africa!
ingredients
- 2 lbs Fish such as maui maui, trout, hake, cod...
- Batter:
- 1 Egg
- 1/2 cup Milk
- 3-4 heaped teaspoons Flour
- 1/2 teaspoons Baking Powder
- Salt
- Oil to cook
- Sauce:
- Peppercorns or pickling spice
- 2 Tablespoons of curry
- 1 tsp Tumeric per pound of fish
- 2 tsp Sugar
- 1/4 - 1/2 cup of water
- 2 Onions sliced.

Mix the batter, coat the raw fish and deep fry until golden brown and cooked through.

Heat the oil in a frying pan and cook sliced onions until transparent but not brown. Add all other sauce ingredients and bring to a boil.

Place fish in a large glass dish, pour sauce over fish and cover with foil/wrap. Leave in the refrigerator for 24-48 hours.

Serve cold. Great with salad
