Mom's Pickled Fish

A childhood favorite growing up in Africa!

ingredients

  • 2 lbs Fish such as maui maui, trout, hake, cod...
  • Batter:
  • 1 Egg
  • 1/2 cup Milk
  • 3-4 heaped teaspoons Flour
  • 1/2 teaspoons Baking Powder
  • Salt
  • Oil to cook
  • Sauce:
  • Peppercorns or pickling spice
  • 2 Tablespoons of curry
  • 1 tsp Tumeric per pound of fish
  • 2 tsp Sugar
  • 1/4 - 1/2 cup of water
  • 2 Onions sliced.

    Mix the batter, coat the raw fish and deep fry until golden brown and cooked through.

  • 2

    Heat the oil in a frying pan and cook sliced onions until transparent but not brown. Add all other sauce ingredients and bring to a boil.

    Place fish in a large glass dish, pour sauce over fish and cover with foil/wrap. Leave in the refrigerator for 24-48 hours.

  • 4

    Serve cold. Great with salad
