White Chocolate Bread Pudding
ingredients
- 8 cups bread, dry or day old
- 3 cups 2% milk
- 1 cup heavy cream
- 4 eggs, separated
- 3 cups sugar
- 1 tsp vanilla extract
- 1 tsp rum
- 1 1/2 cups white chocolate chips
- 1 cup oven roasted pecans
- 1/2 cup butter, melted

Preheat oven to 325.

Soak bread in milk, vanilla, and 1/2 of the sugar. In corporate bread mixture.

Add toasted pecans and white chocolate chips. Whip egg whites until the form a stiff peak. Fold melted butter and whipped egg whites into a mixture with a rubber spatula so as not to deflate egg whites. Place mixture in a buttered casserole dish and bake for 30 minutes or until slightly browned with a soft center.
