Lemon Pepper Shrimp Scampi
ingredients
- 1 cup uncooked orzo
- 2 Tbsp fresh parsley, chopped
- 1/2 tsp salt
- 7 tsp unsalted butter
- 1 1/2 lbs peeled and deveined jumbo shrimp
- 2 tsp minced garlic
- 2 Tbsp fresh lemon juice
- 1/4 tsp black pepper

Cook orzo according to package instructions. Drain and place in bowl. Stir in parsley and 1/4 tsp salt; cover and keep warm.

While orzo cooks, melt 1 Tbsp butter in a large nonstick skillet over medium-high heat. Sprinkle shrimp with remaining 1/4 tsp salt. Add half of shrimp to pan and saute 2 minutes. Transfer mixture to a plate. Melt 1 tsp butter in pan. Add remaining shrimp to pan; saute 2 minutes. Transfer to plate with other shrimp.

Melt remaining 1 Tbsp butter in pan. Add garlic to pan; cook 2 seconds, stirring constantly. Stir in shrimp, lemon juice, and pepper; cook 1 minute.

Spoon orzo onto plate and top with shrimp.
notes
Sauteed asparagus makes a great accompaniment to this meal. Heat 2 Tbsp olive oil in skillet, add asparagus, sprinkle with salt and pepper and saute for about 4 minutes.
