UNSTUFFED CABBAGE SOUP
ingredients
- 1 16oz pkg kielbasa
- 1 onion, chopped
- 1 head thinly chopped cabbage
- 2 lg carrots, sliced thin
- 4 cups water
- 1/3 cup uncooked white rice
- 2 14 1/2 oz cans garlic & onion Tomatoes
- 1/4 tsp pepper

Place kielbasa and onion in a large Dutch oven and cook over medium-high heat stirring often until browned – about 2-3 minutes.

Stir in cabbage and carrots; cook until cabbage is just wilted, 2-3 minutes.

Add tomatoes with juice, rice, water and pepper.

Bring to a boil. Reduce heat to low, cover and simmer, stirring occasionally, until rice is cooked and vegetables are tender,

about 30 minutes.
