Cornish Hens Veracruz

ingredients

  • 4 cornish game hens (fresh or frozen, thawed)
  • 1 cup cooked white rice
  • oregano, salt, and pepper to taste
  • 1/2 cup olive oil
  • 1/2 cup lime juice
  • 1 onion, diced
  • 1 cup chopped canned tomatoes
  • 1/2 cup shredded Monterey jack cheese
  • 1/4 cup sour cream
  • 1 Tbsp dried oregano
  • 1 Tbsp capers
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 tsp ground cumin

    PREP: Preheat oven to 450. Sprinkle hens inside and out with oregano, salt, and pepper. Combine oil and lime juice. Generously coat hens with mixture. Mix together remaining ingredients. Stuff into cavity of hens and truss. Place in greased roasting pan.

    COOK: Bake 15 minutes. Reduce oven temperature to 375. Bake, basting occasionally with oil mixture, 30 to 45 minutes or until juices of hens run clear. (Or until thermometer reads 180.)

    SERVE: Serve with black beans, if desired.
