Oatmeal Raisin Scones

ingredients

  • 2 cups all purpose flour
  • 1/2 cup quick cooking oats
  • 3 tbsp sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup cold butter
  • 1/2 cup raisins
  • 2 large eggs, divided
  • 1/2 cup buttermilk
  • 1 tbsp quick cooking oats

directions

In a large bowl, stir together 1/2 cup oats, sugar, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Stir in raisins. Whisk one of the eggs into the buttermilk, stir into flour mixture to form a soft dough. Turn dough out onto a lightly floured surface and knead about 10 times. Pat dough into a circle about 3/4 inch thick. Cut into 8 wedges. Place on ungreased baking sheet. Lightly beat the remaining egg. Brush tops of scones with egg and sprinkle with 1 tbsp oats. Bake at 400°for 10 - 12 minutes. Let cool on rack.
