BEST CORNBREAD EVER!
The buttermilk make it great!
ingredients
- 2 cups cornmeal
- 3/4 cup flour
- 2T sugar
- 2 1/2 t baking powder
- 1/2 t soda
- 1 t salt
- 2 cups buttermilk
- 4 egg whites or 2 eggs beaten
- 1/4 cup canola oil.

Mix all dry ingredients with a whisk.

In a small bowl beat eggs and buttermilk with fork, and add oil.

Make a well in the center of dry ingredients and pour liquid ingredients into well.Stir until just comes together. It will be lumpy. Bake in cast iron skillet or glass dish that is sprayed well or use oil. I use an 8 by 5 by 2 inch baking dish or cast iron 10 inch skillet. Bake 15- 20 minutes

This has a great texture and isn't dry and crumbly.
