Dad's Lamb Roast with Mint Sauce
This is my “fancy” dish I serve to impress. It is so easy! Thanks to dad for another recipe.
ingredients
ROAST AND TOPPING INGREDIENTS- Lamb roast
- Garlic
- Salt and pepper
- Rosemary, Thyme, Oregano
- Sugar
- Red Wine Vinegar
- Chicken Stock
- Cornstarch
- Red Wine
- Mint Jelly

LAMB ROAST INSTRUCTIONS

Preheat oven to 350 degrees.

Rub lamb with olive oil, garlic, salt, pepper, rosemary, thyme, oregano.

Bake until meat is 135 degrees.
MINT SAUCE INSTRUCTIONS

In a sauce pan, add 3 tbs sugar and 1/4 cup red wine vinegar. Boil this down to a caramel syrup (there will only be a couple of tbs left). Remove from heat.

Add a cup of chicken stock to syrup and stir until dissolved. Bring to a simmer.Add another cup of chicken stock. Bring to a simmer. Remove from heat.

In a separate bowl, add 2 tbs cornstarch and 2 or 3 tbs red wine. Mix. Slowly add to chicken stock mixture. Stir with a whisk to desired thickness. Let simmer for a few minutes.

Add mint jelly a little at a time to desired taste.
