ingredients

  • 3 C canned cannelloni white beans
  • 1/4 C plus 2T olive oil
  • 16 large shrimp peeled (tail left on)
  • 4 cloves garlic
  • 1 sm Serrano chile, thinly sliced or 1/2 t chili flakes
  • 1 C peeled, seeded and diced tomatoes, fresh or canned
  • 1 C whole fresh basil leaves
  • 1 T lemon juice
  • salt & pepper
  • 2 T flat leaf parsley, chopped
  • olive oil for drizzling

directions

Drain beans, reserve liquid. Put beans in a large skillet with just enough of their liquid to moisten. Add 2 T of olive oil and bring to low simmer. Keep warm while preparing shrimp. Heat 1/4 C oil in large skillet, add shrimp, season with salt and cook for 1 minute, tossing frequently. Remove with tongs, add garlic to pan and sauté lightly. Add the chile and cook for 1 minute. Add the tomato and basil, stir briefly, then add lemon juice. Season with salt and pepper. Cook for about 1 minute and then stir in shrimp. Toss well to warm, sprinkle with parsley. Spoon the white beans onto plate, drizzle with oil, top with shrimp.
