Jean's Pepper Steak

ingredients

  • Flank Steak (about one pound)
  • 3 T oil
  • 1 cup water
  • 3 tomatoes
  • 1/4 cup soy sauce
  • 1/2 tsp sugar
  • dash pepper
  • 1 T cornstarch blended in 1/4 c cold water until smooth
  • 1 large green pepper

directions

Cut flank steaks into thin strips against grain of meat. Saute strips quickly in grease until browned. Remove from pan and discard drippings. Add one cup water to pan and 3 peeled and quartered fresh tomatoes. Season with soy sauce and sugar and pepper. Thicken with cornstarch mixture. Simmer until tomatoes are tender, about 10 minutes. Add cut green peppers. Cook until peppers lose there crispness. Add meat.Heat until warm (just a few minutes.
