Sweet potato and black bean burritos
ingredients
- 5 sweet potatoes
- 2 tbsp water
- 3 1/2 c diced onion
- 4 large garlic cloves, minced
- 1 green chile, minced
- 4 tsp ground cumin
- 4 tsp ground coriander
- 3 15oz cans black beans, rinsed and drained
- 2/3c cilantro
- 2 tbsp lemon juice
- 1/2 tsp salt
- flour tortillas
- grated cheddar cheese

1. Cook potatoes in microwave for app. 14min. Peel.

2. In a pan, heat oil. Add onion, garlic and chile. Cook until onions have softened. Add cumin and cook for 1 more minute. Add sweet potatoes and mash together.

3. In a small pan, warm beans, coriander, lemon juice and salt.

4. Preheat oven to 350 degrees.

5. Scoop some potato and bean mixture on top of a warmed tortilla. Top with cheese and roll up. Place seam side down in a greased 13x9 pan. Repeat until pan is filled with rolled up tortillas. Bake 15minutes.

**If freezing, allow potatoes and beans to cool, then fill warm tortillas and top with cheese. Roll up and wrap in plastic wrap and place in a freezer bag. When ready to eat, bake at 350 for 30min or microwave for 2-3 minutes after wrapping burrito with damp paper towel.**
