Thai Green Curry with Beef
ingredients
- 1 medium Sirloin Steak, cut into 1/2 thick strips
- 2 Tbsp Garlic, minced
- 1 Red Bell Pepper, cut to 1/4 inch strips
- 1/2 a medium onion, cut into thin slices
- 1 cup frozen snow peas
- 2 Japanese eggplants cut to half moons
- 8-10 baby corn, halved
- 3 Tbsp chopped Lemongrass
- 3 Tbsp Thai Sweet Basil, finely chopped
- 1-2 Hot Thai Chili peppers, seeded and chopped
- 2 Tbsp wok oil
- White Rice
- For Sauce:
- 1 jar Thai Green Curry Paste
- 1 can Light Coconut Milk
- 3 Tbsp Soy Sauce
- 2 Tbsp Fish sauce
directions
Heat a wok over medium-high heat. Add Wok oil, garlic and beef strips. Cook until beef is almost cooked through. Add curry paste, coconut milk, soy sauce and fish sauce. Stir until blended. Add brown sugar and stir. Let simmer for 5 minutes. Next, turn heat to medium and add lemongrass, onion, bell pepper, eggplant, corn and chilies. Let simmer for 30 minutes, stirring occasionally. With 5 minutes left, add snow peas and basil. Serve over white sticky rice
