Orange-Glazed Shredded Carrots
Sweet and tangy side dish that will complete any meal.
ingredients
- 1/2 cup orange juice
- 1/2 cup reduced-sodium chicken broth
- 1 teaspoon cornstarch
- 2 teaspoon extra virgin olive oil
- 2 10 ounce bag shredded carrots
- 1 teaspoon butter
- 1/4 teaspoon salt

1. Whisk orange juice, broth, and cornstarch in a small bowl.

2. Heat oil in skillet over medium heat.

3. Add carrots and cook, stiring constantly, about 3 minutes.

4. Stir in juice mixture and add in butter and salt.

5. Cover and cook until tender.
