Cheesy Squash Casserole
A down-home sidedish that will compliment any entree perfectly.
ingredients
- 6 cups large squash
- Vegetable oil
- 4 tablespoon butter
- 1/2 cup sour cream
- Salt
- Pepper
- Garlic powder
- 1 cup grated Parmesan cheese
- 1 cup crushed Ritz crackers
- 1 large onion

* Preheat oven to 350 degrees

1. In a large skillet, coat bottom with vegetable oil; saute squash, salt, pepepr, and garlic powder to taste, until browned. Remove from skillet into bowl.

2. Saute onion in skillet; add to bowl with squash, toss evenly.

3. Spray casserole dish with non stick cooking spray and pour squash mixture into pan.

4. Crush Ritz crackers in large ziplock bag.

5. Melt butter in a small pot and pour into ziplock bag with crushed crackers.

6. Top squash with Ritz cracker mixture and bake for 25-30 minutes. Take out of oven and top casserole with parmesan cheese and bake for another 5 minutes or until top is golden brown.
