Herbed Pork Tenderloin

ingredients

  • 1 lb pork tenderloin
  • 1 TBSP olive oil, divided
  • 1/2 TBSP brown sugar
  • 1/2 TBSP ground cinnamon
  • 1/2 TBSP ground cumin
  • 1 tsp ground coriander
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper

directions

Combine all rub ingredients. Rub 1 tsp olive oil onto tenderloin. Roll tenderloin in rub to coat. In a large skillet, heat remaining oil. Add tenderloin and cook for 2-3 minutes or until browned on all sides. Place in pan and bake for 25-30 minutes or until thermometer reads 160. Let stand 10 minutes before serving.
