Shrimp Salad w/Green Goddess Dressing
ingredients
- 1 pound frozen peeled and deveined shrimp thawed
- 1 8oz package small shell pasta, cooked, rinsed, and drained
- 2 teaspoons white wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 small head Iceberg lettuce, cleaned and chopped
- 2 medium tomatoes, cut into wedges
- 1 yellow bell pepper, cut into strips
- Green Goddess Dressing Recipe -
- 1 1/3 cups mayonnaise
- 1/2 cup fresh parsley leaves
- 2 tablespoons chopped fresh chives
- 2 teaspoons Champagne or white wine vinegar
- 1 teaspoon anchovy paste
- 1 teaspoon grated lemon rind
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon pepper

Toss together pasta, vinegar, salt, and pepper. Line a large platter with lettuce, spoon pasta in center, and top with shrimp. Arrange tomato and bell pepper around pasta.

Serve salad with Green Goddess Dressing.

Prepare Dressing - Process all ingredients in a food processor or blender until smooth, stopping to scrape down sides. Cover and chill.

You can substitute a bottle of Kraft Green Goddess Dressing instead of making it. (It is hard to find)
