Sherry Cherry Tomatoes
ingredients
- 2 Tbsp. extra virgin olive oil
- 3 large garlic cloves
- 1 small shallot
- 1 pint cherry tomatoes
- 2 Tbsp. of sherry wine
- 1 tsp. sugar
- 1/2 tsp. crushed red pepper
- Salt, to taste

Preheat oven to 375 degrees.

Heat olive oil in a skillet on medium/high heat and add onions and garlic. Cook for 2 -3 minutes. Add sherry, sugar, pepper flakes & salt. Toss tomatoes to coat.

Place tomato mixture in an oven proof dish and roast 18-20 minutes.

Great with warm bread to dip.
