Easy Chicken Cacciatore
ingredients
- Chicken pieces (de-boned)
- 1/4 cup flour
- 1 1/2 tbsp. canola oil
- 1 medium onion, chopped
- 2 garlic cloves, chopped
- 1 red pepper, sliced
- 5 cups mushrooms, sliced
- 554 ml tomato sauce
- 1/4 cup white wine
- 1/2 cup chicken stock
- 1 bay leaf
- 1 tsp. basil

Lightly coat chicken with flour. In saucepan fry chicken until golden brown. (10 min.) Remove and set aside. In same pan, add onion, garlic, red pepper and mushrooms.

Cook 3 minutes until soft.

Add remaining ingredients and add chicken back to pan. Add tomato sauce and bring to boil. Reduce to low temp.

Cover and simmer (20 minutes)

Remove Bay leaf and serve over rice.
