Charlie's Boiled Crawfish or Crab
Authentic Cajun recipe! Designate an old ice chest for boiled crawfish. The ice chest will be unusable for other purposes after the crawfish boil.
ingredients
- 1-40 lb. sack live crawfish caught within a 3 mile radius from home
- 1 pint Zatarains Crab & Shrimp Boil
- 2 cups Louisiana Crab/Crawfish Powder
- 3 lbs onions
- 2 lbs carrots
- 12 ears of corn, split in half
- 1 bulb of garlic
- 3 lbs smoked sausage
- Swamp Dust to taste

Wash crawfish in #3 washtub
- 2
Preheat about 10 gallons of water in 80 qt pot on outside stove.

Add the Zatarains seasoning. Add the veggies except corn. Bring water to boil. When potatoes are done, add corn and boil for 5 minutes. Bring the water back to a roaring boil, when steam comes up from the lid, add crawfish and cook for 5 minutes. Dump contents into the ice chest. Season with Swamp Dust. Peel, eat and enjoy!

Boil crab for 8 minutes vs. 5 minutes for crawfish.
