Herb Marinated Grilled Vegetables
Great warm or cold
ingredients
- 3/4 cup olive oil, 1/4 cup red wine vinegar, 1/2 teaspoon dried rosemary, 1/2 teaspoon dried thyme, 1/2 teaspoon dried basil, 1 teaspoon dried oregano, 1 tablespoon minced garlic, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, use any vegetables you like such as peppers, onions, mushrooms, zucchinis, squash. Cut them into pieces.
directions
Marinate and wisk all ingredients in a small bowl. Place vegetables in a plastic bag. Pour the marinate over them and refrigerate for 2 hours. Prepare a grill. Remove from marinate and reserve. Grill vegetables 6" away from the heat until tender, brushing with marinate as they cook. Time varies
