Squash Done Right
ingredients
- 6-8 medium yellow squash, sliced
- 1-2 medium zucchini squash, sliced
- 2-3 medium onions, halved and sliced thin
- 1/2 lb bacon, cooked and crumbled - reserving 2 slices
- Salt and pepper to taste

In a large deep skillet brown the bacon, crumble and set aside. Leaving the bacon grease in the skillet, add the squashes, onions and the two slices of bacon - alternate them when adding. Stir. Cover and cook for about 30 minutes over medium heat - stirring often. Turn the heat down if the squash starts to brown. When cooking is complete sprinkle the crumbled bacon on the top and serve.

Feel free to omit the zucchini if you are not a fan.
