Chicken Chalupas
This is a family favorite passed down from my Grandma to my mom and then to me.
ingredients
- 12 corn tortillas cut into fourths
- 4 cups cooked chicken and shredded (4 breasts - wrap in foil and bake 1 hour at 400 degrees, save juice)
- 1 cup sour cream
- 14 ounce can diced green chiles
- 1 can cheddar cheese soup
- 10 ounce can hot enchilada sauce
- 1 cup chicken broth
- 2 small onions, chopped
- 2 cups cheddar cheese, grated
- seasoned salt
- garlic powder
directions

Combine cooked chicken, sour cream, green chiles, onions, garlic powder, and seasoned salt. Mix well.

Sauce:

Mix cheddar cheese soup, enchilada sauce, and chicken broth.

In a 9x13 inch baking pan, layer 1/2 the sauce, then 1/2 the tortillas. Add all the chicken mix and grated cheese. Cover with the rest of the tortillas and the rest of the sauce.

Bake in a 350 degree oven for 45 minutes.

Let stand 15 minutes before cutting.
