Australian Beer Barbequed Wings
These are awesome grilled wings!
ingredients
- Chicken Marinade
- 12 whole chicken wings (2 1/2 - 3 lbs.)
- 1/4 cup vegetable oil
- 1/4 cup fresh lemon juice
- 1/4 cup Worchestershire sauce
- 1/2 cup beer
- 1 tsp salt
- 1 tsp. reshly ground pepper
- Barbeque Sauce
- 2 tbsp. vegetable oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 2 tsp. minced fresh ginger
- 1/2 tsp. hot red pepper flakes
- 1 cup ketchup
- 1/2 cup beer
- 2 tsp. fresh lemon juice
- 2 tbsp. Worcestershire sauce
- 2 tbsp. red wine vinegar
- 1 tbsp. packed dark brown sugar
- 1 tbsp. honey
- 2 tsp. soy sauce
- 1 tsp. dry mustard
- 1/2 tsp. freshly ground black pepper

Rinse wings under cold water, drain and dry. Make 2-3 slashed, to the bone, in the meaty part of each wing. Place in nonreactive bowl and stir in oil, lemon juice, Worcestershire sauce, beer, salt and pepper. Cover, and marinate in refrigerator for up to 4 hours, turning occasionally.

To make sauce, heat oil, add onion, garlic, ginger, and hot pepper flakes and saute’, stirring until onion and garlic are lightly browned, about 5 minutes. Stir in ketchup, beer, lemon juice, Worcestershire sauce, vinegar, brown sugar, honey, soy sauce, mustard and pepper, and bring to a boil. Reduce heat to low and simmer gently until sauce is thick and richly flavored, 10-15 minutes. Remove and take out one cup, set aside for serving.

Preheat grill. Drain wings and put them on hot grate, pulling them open to expose as much skin as possible to flame. Grill, turning several times until thicker wing sections are no longer pink near the bone, 12-16 minutes. Start basting the wings with barbeque the last 5 minutes, then transfer to a platter and brush with sauce again.

Serve accompanied by the reserved sauce.

The recipe calls for Australian beer, like Fosters, but any beer really is fine.
